Okay, sometimes you just need a little comfort food! And, this recipe has been a family favorite for probably about 15 years—when my oldest daughter came home from a sleepover and said I needed to contact the other mom for THE BEST RECIPE EVER!
When the pickiest kid likes something, you get the recipe! And, years later, this is still a staple in our household. I loved that it was one that I could take frozen chicken out and throw in the crockpot before work—and then 'finish off' the meal after work. We have tried it over mashed potatoes and over pasta—and definitely prefer it over pasta. But, you really can't go wrong either way!
Here's the recipe I got from a mom (Laura) in Sioux City—and I have been grateful for this crowd pleaser so often over the years! Let me know if you try it and how your family likes it!
Cream Cheese Crock Pot Chicken ️
CROCK POT INGREDIENTS:
4 boneless skinless chicken breasts
2 T melted butter ( I don't melt mine -- just put it on top right out of the fridge)
Salt and Pepper to taste
1 package dry Italian seasoning mix ( I often don't have this so I just put in some Italian seasoning)
SAUCE INGREDIENTS:
2 T butter to brown
1 can cream of chicken soup
8oz cream cheese cubed
1/2 cup chicken broth ( I do a little more to make it more 'saucy'
and onion powder and garlic powder to taste.
DIRECTIONS:
Put the chicken in a crock pot with the ingredients listed there. Cover and cook on low 6-7 hours.
About 45 minutes before eating, brown the next 2T in a saucepan (You can skip this step but we love the taste that browning butter gives!) Add the other ingredients listed there and cook until smooth.
While sauce is cooking shred the chicken and then add to the sauce when it is smooth.
Serve over potatoes or pasta
